Parmigiana di melanzane ... (eggplants)
During the Summer, sicilian people often cook this dish. It's delicious !!! It's not hard to do it, but it takes some time. It tastes best the day after and when it's cold.
To prepare this dish, you need:

Eggplants, tomato sauce, parmesan cheese, olive oil, hard boiled eggs, salt and pepper, and some tasty cheese.

I don't know why, but vegetables always get bigger and bigger ...

You soak the eggplants in salty water for about half an hour. It takes the bitternes off ...
You drain and dry the eggplants. After you fry them in olive oil ...


At this point, you start fixing the eggplants into the cooking pan ...

Spread with tomato sauce and parmesan cheese ...
Put another layer of eggplants...
plus tomato sauce ...

And parmesan cheese ...
You can add hard boiled eggs and pieces of your favorite cheese ...

Cover again with tomato sauce and parmesan cheese ...
To finish the layers you can spread your favorite melting cheese ...
Now you can put it into the electric oven ...
This is how it looks, when it's done ...

It tastes better the day after.
During the Summer it's nice to eat it cold from the fridge.
