Caponata
To make a caponata you need:

eggplants (aubergines)
peppers
onions
olive oil and vinegar
salt and sugar
Chop a large onion ...
and cut longwise the peppers ...


stew the onions and peppers, with some olive oil, for about half an hour
At this point, you cut the eggplants into small squares ...

Then you cover everything with a lot of salt and water. Leave it like this for about half an hour. The salt is supposed to take out the bitterness of the eggplants ...
Drain the eggplants in a colander and stew them with some onions and tomatoes. Again, add some olive oil ...
At this point, I added some sugar ...
and some vinegar ...
Put everything toghether: green peppers and eggplants, plus the vinegar already mixed with the sugar ...
The caponata is ready to be served. It's good either hot or cold ...
