Roasted peppers ...
When I go down to Sicily I usually buy roasted peppers at the bread shop ...

like this ...

I take them home, peel the skin off, take the seeds out, and cut the peppers into stripes ...
After I peel the peppers, I make some salamarigghiu sauce
( a sicilian sauce)
I need some olive oil, parsley, garlic and lemon ...


I chop the parsley and the garlic ...
Add some olive oil and squeeze a lemon ...
Pour over the peppers and mix it well ...

It goes well with fish ...
and meat ...
Some times ...
I roast the pepers at home in the oven ...

Inspiration in the kitchen ...
chinese noodles ...
Here at home we all like chinese noodles. So I usually cook it the way a chinese girl has taught me to do it.

raw chinese noodles look just like that ...
First I make my own chicken stock. All I need is some chicken, an onion, some celery, salt and pepper.

I let it cook for about 20 minutes in a large pot ...
Then I turn off the gas, take the chicken, the celery and the onion out ... and throw in the chinese noodles ...
With the gas off, I leave the noodles in the pot (covered) for four minutes ...
After I rinse the noodles under cold water ...


I also leave some chicken stock apart ...

In the mean time I stir fry some onions ...

When the onions are brown I add some ground pork meat ...
Stir fry again until the meat gets brown ...

At this point I put together the meat and the chinese noodles ...
Plus some soya sauce and chicken stock ....

So it doesn't get attached to the bottom, I keep adding some chicken stock

I let it cook for about 15/20 minutes, making sure it doesn't stick to the bottom ...
It's good either hot or cold ...
Rice Salad ...

Rice salad is very easy to make ... it's also delicious during the summer.

I usually cook two cups of rice. When the rice is ready, (uncle Ben's rice is fine) I rinse it, in a colander, under cold water .
Then I put the rice in a large bowl, add two cans of tuna fish and two jars of mix vegetables preserves.
At last I add some olive oil and squeeze a lemon. It can be left in the fridge so it gets nice and cold.
Here in Italy, they don't sell apple sauce ...
So ... I have to make my own ...

1-I peel and cut the apples in four pieces.
2-I cook them in a large pot, with one inch water, for about 10/15 minutes or until they are soft.
3-I then drain the apples in a colander ...
4-Put them in a bowl and blend them with a hand blender.
5-At last I add some cinnamon and lemon. I do not add any sugar if the apples are sweet.

Normally I get red apples because they are sweeter.

Note: Since this is a home made apple sauce, and the jars do not go through the water bath process, it must be eaten within a week.

When the weather is very very hot ... I make some cold pasta ...

To make a cold pasta I use these ingredients :
maccheroni, fresh tomatoes, a can or two tuna fish, an onion, salt and pepper and some olive oil ...

When the past is already cooked, I rinse it under cold water ...
Then ... I mix together some tomatoes, tuna fish, an onion, a bit of salt and pepper and olive oil ...

At last ... I add the maccheroni ...
(it's delicious !)
To make a quick tomato sauce ... I need some tomatoes ...
and onions ...

Some times, when I don't have much time, instead of pealing the tomatoes, after scolding them with hot water...

I cut them, with the skin, into pieces. I also add a large onion, cut into pieces, salt and pepper and blend everything with a hand blender.

Then I let it cook, at a medium heat, for about an hour, or until it get's pretty much concentrated.
It turned out perfect !!!

Salsiccia Siciliana - Traditional Sicilian Sausage
In Sicily it's very common to cook "la salsiccia"!

You go to the butcher and he prepares the salsiccia - sausage -the way you want.
They ask you you how much pepper and salt they should add to it. Some people like the sausage to be piccante (very hot). My favorite one is - fennel sausage ...

Some times I cook the sausage in a frying pan ... I prick each sausage with a fork and add a little bit of water. So it doesn't get stick to the pan.
It's quick and very easy ...
