Some times, when I don't have much time, instead of pealing the tomatoes, after scolding them with hot water... I cut them, with the skin, into pieces. I also add a large onion, cut into pieces, salt and pepper and blend everything with a hand blender. Then I let it cook, at a medium heat, for about an hour, or until it get's pretty much concentrated.
It turned out perfect !!!

In Sicily it's very common to cook "la salsiccia"!
You go to the butcher and he prepares the salsiccia - sausage -the way you want. They ask you you how much pepper and salt they should add to it. Some people like the sausage to be piccante (very hot). My favorite one is - fennel sausage ...
Some times I cook the sausage in a frying pan ... I prick each sausage with a fork and add a little bit of water. So it doesn't get stick to the pan.
It's quick and very easy ...
It's also delicious ... We usually eat sausage with green salad. It sort of balance the calories ...

Pizza !!!!
Once a week we get some pizza from the Bread Shop. Our friends Giorgio and Rossano make the most delicious pizza in the whole town.
Pizza from the Bread Shop are thicker than pizza from the Pizzeria. Of course, I like them either way ...

Banana and raisin pudding ...
I cooked some bananas with milk, for ten minutes. Then ... blended everything with a hand blender, and added some corn starch and raisin. Continued to cook until it got nice and thick. Left it in the fridge for two hours. I did not add any sugar or artificial flavor.
It was delicious !!!
The other day a friend of mine came to visit me ... She's brazilian and we both like black beans.
I usually clean and wash the beans the night before.
Then I cover it with water and let it soak over night. The water should cover the beans by two thirds. The next day, I add some fresh garlic, an onion, salt and pepper and a bay leaf. I bring everything to boil and let it cook for about two hours. Black beans go well with rice, any kind of meat, and vegetables.
